This is my Saturday weekly newsletter, with my selection of 7 weeknight meals and 3 healthy salads for the upcoming week (4/21/24 - 4/27/24) - a simplified version of a weekly meal plan. Almost all these recipes are 30-minute ONE-PAN meals! Did you see the latest newsletter with My 12 Best Shrimp Dinners for Spring?

DAY 1: Garlic Butter Chicken with Zucchini, Corn, and (store-bought) Ravioli​

DAY 2: Cilantro Lime Honey Garlic Salmon (baked in foil)​

DAY 3: Asian Beef with Mushrooms and Snow Peas​

DAY 4: Hasselback Chicken Stuffed with Spinach, Parmesan, Mozzarella, Cream Cheese, and Bacon​

DAY 5: Creamy Tuscan Shrimp with Spinach, Artichokes, and Sun-Dried Tomatoes​

DAY 6: Sun-Dried Tomato and Mushroom Pasta in a Garlic and Basil Cream Sauce​

DAY 7: Chicken with Peaches and Lemon-Honey Butter Sauce (for fresh, canned, or frozen peaches)

SALAD 1: ​Greek Salad with Avocado and Capers​

SALAD 2: Roasted Vegetable Salad with Brussels Sprouts, Sweet Potatoes (or Butternut Squash), Beets, Pecans, and dried Cranberries​

SALAD 3: Spinach Salad with Cooked Apples, Pecans, Goat Cheese, and Maple-Lime Dressing​
