This is my Saturday weekly newsletter, with my selection of 7 weeknight meals and 3 healthy salads for the upcoming week (5/5/24 - 5/11/24) - a simplified version of a weekly meal plan. If you need a last-minute inspiration for Cinco De Mayo, check out my 15 Mexican-Inspired Recipes.

DAY 1: Chicken Mozzarella Pasta with Sun-Dried Tomatoes, Basil, and Garlic Cream Sauce​

DAY 2: Stuffed Roasted Spaghetti Squash with Italian Sausage, Spinach, Cherry Tomatoes, Mushrooms, and Parmesan​

DAY 3: Thai Coconut Curry Salmon with Spinach and Bell Peppers (30 Minutes, One-Pan)​

DAY 4: Creamy Basil Pesto Chicken Pasta with Roasted Cherry Tomatoes and Toasted Pine Nuts​

DAY 5: Scallop (or Shrimp) Spaghetti in Creamy White Wine Butter Garlic Sauce with Capers​

DAY 6: Chicken Spaghetti with Roasted Cherry Tomatoes, Burrata Cheese, Pine Nuts, and Lemon Butter Garlic Sauce​

DAY 7: Stuffed Roasted Butternut Squash with Sausage, Spinach, Pecans, and Dried Cranberries (you can also use spaghetti squash)

SALAD 1: ​Strawberry Spinach Salad with Blueberries, Pecans, Feta Cheese, and Balsamic Glaze​

SALAD 2: Avocado Corn Tomato Salad with Bacon, Feta, and Creamy Cilantro-Lime Dressing​

SALAD 3: Avocado Mango Salad with Arugula, Pine Nuts, and Honey-Lime Dressing​
