​Greek Pasta Salad (15 Minutes)​

This quick and easy Greek pasta salad takes only 15 minutes and showcases traditional Mediterranean cuisine ingredients: tomatoes, cucumber, bell pepper, olives, red onions, and feta cheese. The dressing is delicious and homemade. You can also use store-bought Greek or Italian dressing instead. Elevate it to an entrΓ©e by adding a protein, such as grilled salmon, pan-seared shrimp, or chicken.

​Blackened Shrimp (20 Minutes, One-Pan)​

​Blackened shrimp takes only 20 minutes and is done in one pan on the stovetop. The homemade seasoning is made with chili powders and dried herbs. The shrimp is pan-seared in a cast iron skillet to achieve a beautiful blackened crust. By the way, blackening does not mean burnt. You don't need overly high heat or flames for blackening; the spices play a major role instead of heat. It's so versatile that you can serve it pretty much with anything!

  • Serve it with pasta, rice, risotto, over salad, or roasted vegetables. Or with store-bought ravioli or tortellini.
  • For a low-carb side dish, serve it with cauliflower "rice" or roasted spaghetti squash.
  • This Pescatarian recipe is low-carb, keto-friendly, dairy-free, gluten-free, and rich in lean protein.

​Plum Spinach Salad with Feta Cheese, Pecans, and Honey-Lemon Dressing is healthy, gluten-free, and high in fiber. To make it dairy-free, use vegan Feta cheese.
